Beyond USDA Prime Grading for Steakhouses
While USDA Prime is an important indicator of beef quality, it shouldn’t be the only factor when evaluating a steakhouse. Truly exceptional restaurants go beyond the grade by providing transparency about the beef’s origin, breed, feeding program, aging process, and preparation. Understanding the full story behind the steak offers a much more meaningful measure of quality than a grading label alone.
