Ambience Seasoning: Can Music Make Wagyu Taste Sweeter?

Same Wagyu. Same cut. Different soundtrack: Ambience Seasoning!

This experiment of Ambience Seasoning with Wagyu will blow your mind!
I had read about sonic seasoning, sometimes described more broadly as ambience seasoning: the idea that sound, lighting, color, and atmosphere can influence the way we experience food.
Researchers have repeatedly linked high-pitched sounds with sweetness. Lower-pitched sounds, meanwhile, are more commonly associated with bitterness, heaviness, and intensity.
It sounded fascinating.
So, I decided to test it with Japanese Wagyu.
The Experiment
Ten people participated in the beef tasting of 15 samples. They scored each sample from 1 to 10 based on:
Tenderness
Succulence
Flavor
Sweetness
Overall enjoyment
Among the 15 samples, the experiment compared two presentations of the exactly same Saga Japanese Black A5 Wagyu Striploin:
Saga Sample 1: Served without the special music condition.
Saga Sample 2: The identical beef, served while high-pitched music was playing.

During tasting of Saga sample 2, the high-pitched music played was:
The two samples were exactly the same beef. The music was the only intended difference.
Could the soundtrack change the way the beef tasted?
The first results were striking
At first glance, the answer looked like a very convincing yes.

The same beef scored 1.1 points sweeter when served with the high-pitched soundtrack.

But the average only tells part of the story.
Eight out of ten testers said it was sweeter

The pattern was hard to ignore:
Eight testers rated it sweeter.
One tester reported no difference (Taster 6)
Only one tester scored it lower (Taster 2)
Then came the plot twist.
The one tester who scored it lower (Tester 2)
After the tasting, I revealed the secret to the testers.
I explained that Saga Sample 1 and Saga Sample 2 were the same beef. I also described the theory behind the experiment: high-pitched sounds may draw attention to sweetness and make food taste sweeter.
Everyone was shocked by the results! They were fascinated by the possibility that Wagyu—or any other food—could taste sweeter simply by changing the surrounding sound.
And this was no longer just an abstract theory. In a blind tasting, 8 of the 10 testers rated the same Wagyu as sweeter when it was accompanied by high-pitched music. Only one person rated Sample 2—the ambience-seasoned presentation—as less sweet than Sample 1.
I was not concerned that one person had responded in the opposite direction. After all, 80% of the testers had perceived the second presentation as sweeter. Since this was meant to be a fun experiment rather than a rigorous scientific study, I was more than satisfied with the result.
But then something unexpected happened.
Tester 2 approached me and explained that has a hearing impairment. Tester 2 later shared a previous audiology report documenting hearing loss in both ears, including reduced sensitivity across the higher-frequency range—the same general area of sound that was central to the experiment.

That was a remarkable coincidence, and it made the experiment even more interesting.
The only person who rated the music condition as less sweet was also the person who may not have perceived the intended high-frequency cues in the same way as the other testers.
It is also worth noting that Tester 2, despite having no formal training in sensory analysis, was one of the most precise and consistent evaluators throughout the rest of the tasting. The ambience-seasoned sample was the notable exception.
So, did the music really make the beef sweeter?
It certainly did.
The beef itself did not change. Its sugar content did not change. Its marbling did not change.
What changed was the environment surrounding it.
The high-pitched music may have directed the testers’ attention toward the delicate, sweet qualities already present in the Wagyu. It may also have created an expectation of lightness and sweetness, while the emotional character of the songs may have carried over into the tasting experience.
This experiment suggests that sensory analysis based on the five senses does not explain everything that happens when we flavor food. Our feelings, memories, expectations, and personal context ultimately shape how we experience it.
This connects with what Karen Page and Andrew Dornenburg popularized as the “X-factor” in their book The Flavor Bible: the part of flavor that goes beyond what happens on the tongue.
Taste, aroma, texture, and temperature provide the foundation, but appearance, sound, mood, memory, and expectations can transform the final experience. The brain combines all these signals into what we perceive as flavor.
That means the atmosphere surrounding a meal may become part of the recipe—even when the food itself never changes.

In the end, perhaps the most memorable ingredient of the tasting was not the Wagyu, the marbling, or even the music—it was the discovery that flavor is never created by food alone. The same piece of beef became a different experience simply because the world around it had changed. That is the magic of ambience seasoning: sometimes, to change what we taste, we do not need to change the recipe. We only need to change the atmosphere.
