In the fourth episode of “Lean Gentini: A Meat Sommelier in Japan,” I had the honor of meeting the internationally renowned Marika Watanabe-san, better known as “The Kimono Butcher.”

Marika is a true pioneer in the world of Wagyu — an inspiring leader whose elegance, discipline, and strength have reshaped perceptions of butchery in Japan and beyond. In a field traditionally dominated by men, she has become a symbol of passion, resilience, and craftsmanship, inspiring a new generation to see meat not just as a product, but as a cultural expression.

From Humble Beginnings to Global Recognition
Marika’s journey began far from the spotlight. Originally expected to pursue a more traditional path as an English teacher, she instead followed her heart into the world of meat — a decision her mother initially struggled to accept. Yet through years of hard work, dedication, and unwavering spirit, Marika proved that mastery has no gender. Today, her mother stands among her proudest supporters.

Starting as a part-time butcher, Marika developed a deep respect for Wagyu’s complexity and the artistry required to honor it. Her commitment soon evolved into a lifelong mission — to elevate butchery into a form of cultural storytelling.

Blending Tradition and Modernity
What sets Marika apart is her unique ability to bridge Japan’s cultural heritage with modern butchery. Performing in traditional kimono, she fuses grace and strength, transforming each demonstration into a tribute to Japanese craftsmanship.
Her work has taken her around the world — from Melbourne to Dubai — where she showcases her butchery skills and educates audiences on the value of underappreciated Wagyu cuts. Through her initiative, “Marika Selection,” she curates premium Wagyu that reflects her philosophy of sustainability and respect for the entire production chain, from farmers to butchers.

Marika’s story is more than professional success — it’s a reflection of the heart and humility that define Japan’s Wagyu culture. My Tribute
Meeting Marika Watanabe-san was one of the most inspiring encounters of my journey through Japan. This episode is my personal tribute to her extraordinary story — a story that reminds us that behind every cut of Wagyu lies dedication, artistry, and a deep love for the craft.
