Among Himeji Wagyu, those derived from Tajima cattle as the base cattle are referred to as "PREMIUM Himeji Wagyu."
Tajima cattle are exceptional as beef cattle due to their superior meat quality and color, delicate and beautiful marbling (sashi), low subcutaneous fat, and excellent meat yield. To preserve this superior breed, they are managed in closed systems to prevent crossbreeding with other regions' cattle. For many years, their pure bloodline has been maintained and raised across Hyogo Prefecture. This pure lineage is the true proof of deliciousness.
