Matsusaka Beef Definition of Matsusaka Beef: •Black-haired Wagyu •Virgin female cattle •Registered in the Matsusaka Beef Individual Identification Management System •Raised for the longest and final period in the Matsusaka beef production area (the former 22 municipalities) Note: Calves must be introduced into the Matsusaka beef production area by the age of 12 months, and any movement after introduction is limited to within the production area. Cattle meeting all these conditions and shipped accordingly are defined as Matsusaka Beef. Note: The condition regarding calves being introduced into the Matsusaka beef production area by the age of 12 months applies to cattle introduced on or after April 1, 2016. Additionally, both “Matsusakaushi” and “Matsusakagyu” are correct pronunciations of “Matsusaka Beef.” However, “Matsuzakaushi,” “Matsuzakagyu,” and the spelling “松坂牛” are incorrect.
