The Most Comprehensive Guide to Wagyu

Before moving to Japan to specialize in Wagyu, I realized that a reliable bibliography on the subject was practically nonexistent. Some books were overly simplistic. Others contained inaccuracies. Most focused primarily on recipes rather than on genetics, history, brands, production systems, or science.

At that point, I assumed that traveling to Japan, the birthplace of Wagyu, would give me access to comprehensive and well-organized material. And indeed, I found a wealth of information. However, much of it was dispersed across academic papers, technical reports, industry magazines, government publications, and oral knowledge passed down through professionals. The information was fragmented and scattered across hundreds of documents rather than consolidated into a single, structured reference.

Around the same time, a close friend of mine who is a renowned chef in the meat industry, asked me if I could recommend a serious book about Wagyu. I struggled to answer. That moment became the trigger for this project. The primary intention of this book is to bridge that gap and offer one of the most comprehensive guides to Wagyu available today; rigorous enough for professionals, yet accessible enough for enthusiasts. It is written to speak to chefs, butchers, producers, and curious consumers alike. I have aimed to achieve a careful balance between depth and accessibility.

Throughout the book, there are multiple references and citations to academic articles and scientific papers, alongside more than 100 reader-friendly infographics, tables, and charts designed to make complex concepts easier to understand.

Writing about Wagyu would be incomplete without connecting it to Japanese culture. Throughout the book, you will find references to Japanese philosophical concepts deeply intertwined with Wagyu’s evolution, accompanied by original illustrations created by a talented Japanese manga artist. These elements are intentional and meaningful.

They serve as both a tribute to, and a reflection of, the culture so profoundly connected to Wagyu itself. In various ways, this work stands as my humble homage to a culture I deeply admire and respect; one that has shaped not only Wagyu but also my journey in understanding it.

Within these pages, I share everything you need to know about the world of Wagyu, from its rich history and unique breeds to grading systems, flavor science, health characteristics, and global expansion.

This book is the result of years of hands-on experience with some of the world’s most respected breeders, chefs, butchers, and farmers, from the misty mountains of Japan to vibrant cities across the globe.
