By the late Kamakura period, it was depicted in the "Kokugyu Juzu" (Ten Illustrations of National Cattle) and recognized as one of the top-quality cattle. Today, all feed and bloodlines of Yamato Beef are centrally managed. Raised with great care in an environment cultivated by history and in a favorable climate, Yamato Beef is known for its melt-in-the-mouth fat, rich flavor, and delightful taste.
Among "Yamato Beef," those that meet strict standards regarding the fattening period, BMS (Beef Marbling Standard), and oleic acid content are certified as Nara Prefecture Premium Select.
