Criteria for Yamagata Beef Certification
Raised and fattened for the longest period in Yamagata Prefecture, with the final feeding location also in Yamagata. Applies to uncalved and castrated black Wagyu.
Meets the meat quality grade of 4 or higher as defined by the Japan Meat Grading Association.
Additionally, those that satisfy condition 1 and have a meat quality grade of 3 are also treated similarly.
