A New Standard for Choosing Wagyu! "Tottori Wagyu Oleic 55"
Tottori has been a breeding ground for high-quality cattle since the Edo period. The Tottori bloodline is known for containing high levels of oleic acid, which is also the main component of olive oil. Oleic acid is believed to contribute to the smooth melt-in-your-mouth texture of beef. In 2011, Tottori Wagyu with an oleic acid content of 55% or higher was branded as "Tottori Wagyu Oleic 55."
