Tosa Wagyu refers to wagyu cattle raised in Kochi Prefecture, consisting of both the "Japanese Brown Kochi Line" and "Japanese Black" breeds. The name "Tosa Wagyu" is used to make it more familiar to consumers. In certain regions, it is also referred to as "Shikoku Karst Beef" or "Reihoku Beef," and in Okawa Village, Japanese Black cattle are known as "Okawa Kuro-ushi."
Additionally, the Japanese Brown breed known as "Tosa Akaushi," which has been exclusively improved in Kochi, has recently gained popularity for its strong natural beef flavor and a perfect balance of lean meat and marbling.
To ensure food safety, a "traceability system" is implemented for Tosa Wagyu, making the production and shipping history clear. By confirming the "production history" of each individual cow, Kochi is advancing the establishment of a robust traceability system.
