Tajima beef is a breed of cattle from Hyogo Prefecture that has preserved its pure bloodline. This breed has maintained its pure lineage since the Edo period. Tajima beef, raised by designated registered producers of the Kobe Meat Distribution Promotion Council within Hyogo Prefecture and shipped to meat centers within Hyogo Prefecture, is beef from cattle aged between 28 and 60 months, with a yield grade of “A” or “B.”
Due to its excellent bloodline and strictly controlled rearing environment, Tajima beef has fine muscle fibers and abundant marbling, resulting in exceptionally tender and richly textured meat. Besides Kobe beef, Tajima cattle are also raised as the source cattle for Matsusaka beef and other premium beef varieties.
