Yamaguchi Prefecture has preserved the Mishima-Ushi, a breed of cattle designated as a national natural monument, often referred to as the origin of Japanese beef cattle. "Sumeragi Beef" is a premium black-haired wagyu that continues this tradition. While modern beef cattle were developed by crossbreeding various foreign breeds with wagyu during the Meiji era, Mishima-Ushi is the only remaining purebred cattle in Japan, completely unaffected by foreign influences. With fewer than 100 head of Mishima-Ushi remaining today, they are a protected national treasure. Mishima-Ushi possess a genetic trait that produces excellent marbling in their meat. "Sumeragi Beef" carefully inherits and preserves this prized genetic heritage, resulting in high-quality beef that reflects the history and purity of Japan's cattle lineage.
