Shonan Wagyu is the general term for wagyu beef raised within the JA Sagami region, which has been graded as A or B with a quality grade of 3 or higher. It was trademarked in 2014, and thanks to careful breeding and a unique feed blend developed by the agricultural cooperative, the beef is characterized by its rich, mellow fat. It is beloved by local hotels and bistros.
