"Shionagi Wagyu" is a premium beef born on the Oki Islands, where calves are raised in the island’s natural environment for 7 to 9 months, roaming freely and strengthening their legs. After this initial period, the cattle are transferred to farms in Okuizumo on the mainland for a fattening and rearing period of 600 to 650 days (approximately 20 to 22 months). This careful process ensures the production of safe and high-quality Shimane Prefecture Wagyu.
Due to the high costs of raising cattle on the Oki Islands, the cattle are moved to the mainland to continue their development. There, they are nurtured in barns filled with the handmade scent of wood, a signature characteristic of the "Shionagi Wagyu" brand developed by Morimitsu, originating from the Oki Islands.
The cattle benefit from a stress-free environment, rich natural surroundings, and the devoted care of farmers. The production of "Shionagi Wagyu" relies on three key elements: 1) breeding high-quality cattle, 2) aging and preservation, and 3) the craftsmanship and skill of expert artisans. These combined efforts produce the delicious and tender Shionagi Wagyu.
