In Nagano Prefecture, Shinshu Wagyu is raised with great care and affection on farms surrounded by the majestic mountains of Shinshu. The Japanese Black cattle, which Shinshu proudly nurtures, thrive in the region's cool climate, fertile lands, and abundant water. Thanks to the meticulous production management of certified farms, Shinshu Wagyu develops a unique quality where its fat melts at a low temperature, resulting in beef that is tender, melts in the mouth, and offers an exceptional flavor.
The history of raising Japanese Black cattle in Shinshu began with the introduction of Tajima cattle, which have the longest lineage. By providing feed known as "local blends," specially formulated to suit the region, the beef produced is of high quality, with sweet marbling.
