Shinshu Premium Beef is a top-brand beef from Nagano Prefecture that meets Nagano's unique "New Standard of Deliciousness," known for its exceptional taste (aroma and texture). Raised in the cool, rich environment of Shinshu, nourished by pure water from the Alps, and managed under the strict production controls of certified farms, Shinshu Premium Beef is characterized by its smooth fat, excellent melt-in-your-mouth quality, and superior tenderness and flavor. It is a "new standard beef" that Shinshu proudly promotes nationwide.
What is Shinshu Premium Beef?
Shinshu Premium Beef is a brand of wagyu that has passed Nagano Prefecture's unique certification system for the "New Standard of Deliciousness." The certification criteria require the beef to meet both the fat marbling score (BMS-No.) in the longissimus muscle (ribeye) and the oleic acid content percentage, according to one of the following patterns:
Pattern ①: Oleic acid content of 58% or more and a fat marbling score of 5 or higher.
Pattern ②: Oleic acid content of 55% or more and a fat marbling score of 7 or higher.
Pattern ③: Oleic acid content of 52% or more and a fat marbling score of 8 or higher.
Moreover, the beef certified as "Shinshu Premium Beef" must come from Japanese Black cattle raised at farms certified as "Shinshu Anshin Agricultural Products" by Nagano Prefecture, which includes health inspections and checks of breeding management records.
