“Shimane Wagyu” refers to the highest quality beef from Shimane Prefecture, specifically black-haired cattle raised locally and shipped to the Shimane Meat Public Corporation. It must meet the Japan Meat Grading Association’s standards of A-4 or B-4 or higher. These cattle are known for their calm nature, ease of breeding, and excellent physique. The beef, noted for its tenderness and rich umami, has won numerous awards, including the Prime Minister’s Prize. To best enjoy its natural flavor, it should be cooked slowly over high heat with salt added last.
