Feature 1: Rearing from Nureko Calves
Typically, cattle farmers purchase calves around six months of age to raise and then ship for beef. Shihoro Black Beef takes advantage of the dairy farming culture in Shihoro Town, Hokkaido, starting with calves known as “Nureko,” which are around one week to ten days old, born from high-quality dairy cows crossbred with Wagyu. These calves are weaned from their mother’s colostrum milk early on. By beginning rearing from this newborn “Nureko” stage, the farmers can better understand each animal’s unique characteristics, resulting in high-quality beef with minimal variation in meat quality.
Feature 2: Commitment to Circular Agriculture
Shihoro Town, known as a major potato-producing region, uses manure from the farms as fertilizer for a variety of crops in the area. Some of these crops, in turn, are used as feed for Shihoro Black Beef cattle, contributing to a circular agricultural system that supports the local community.
