Conditions for small-scale farm beef
The beef must be raised on small-scale livestock farming and on a farm of the same group that is approved by our farm.
The meat quality of the carcass must be graded "3" or higher and the yield grade must be "A" or "B" as stipulated by the Japan Meat Grading Association.

Maesawa beef from Ogata Farms is considered some of the highest quality beef from Japan, and dining on this Wagyu is considered a delicacy. Over generations, the farm has perfected the formula for raising high quality beef, starting with a quiet and stress-free environment for the cattle where they are allowed to “sleep in peace.” The cattle are also fed a diet of beer lees, made from local beer, whiskey, and soy, which gives a faint sweetness to the beef. No hormones are ever used on these cattle.
This Ogata Manhattan packs big flavor and plenty of marbling into the ideal serving size for one.
