The meat quality must meet the following grading standards issued by the Japan Meat Grading Association:
• Grade: Cattle with a grade of 2 or higher are eligible.
• However, carcasses with “exceptionally poor meat quality” are excluded.
• Japanese Black Cattle: Among the “Nakana Beef,” cattle with a grade of 5 or higher are designated as “Super Nakana Beef.”

Nakana Beef Standards

Breed:

• Wagyu

• Crossbreed (Japanese Black × Holstein)

Feed Requirements:

• Fed the exclusive “Nakana Beef” feed for at least one year prior to shipment

Grading Criteria:

• Certified by the Japan Meat Grading Association with a grade of 2 or higher

• Exception: Carcasses with significantly inferior meat quality are excluded

Special Grades:

Super Nakana Beef:

• Crossbreeds: Grade 4 or higher

• Wagyu: Grade 5 or higher

Slaughterhouses:

• Public slaughterhouses nationwide

Age at Shipment:

• Healthy cattle over two years old

Safety Management:

• Strict hygiene protocols

• Compliance with the Pharmaceutical Affairs Law (for veterinary drugs) and the Feed Safety Act

Producers:

• Certified Nakana Beef Production Cooperative members

Traceability:

• All shipped cattle are registered with the Ministry of Agriculture’s Livestock Individual Identification Data System

Note: For each shipped cow, a producer’s confirmation certificate is issued, ensuring safety and transparency.
