Koshu-San Wagyu Koshu-San Wagyu is Japanese Black cattle raised in Yamanashi, a region renowned for its wine. Like Koshu Beef, these cattle are lovingly and carefully raised in the rich natural environment of Yamanashi Prefecture. Only members of the Koshu Beef Research Association are permitted to use the Koshu brand name, and a key requirement is that the cattle must be raised in Yamanashi Prefecture for the longest duration among other regions where wagyu is raised. Koshu Beef refers to wagyu graded as "Grade 4" or higher out of the five grades defined by the grading association. In contrast, "Koshu-San Wagyu" refers to wagyu graded as Grade 3 or lower. Despite this difference, Koshu-San Wagyu is still a premium Japanese Black breed, characterized by its vibrant red color and beautifully marbled white fat.
