Koshu Beef refers to beef that has been meticulously raised within the rich natural environment of Yamanashi by members of the Koshu Beef and Koshu Wine Beef Promotion Council, utilizing their highly refined breeding techniques. Only Japanese Black cattle that have been raised with care and graded at quality (meat quality) ranks of 4 or 5 are sold as "Koshu Beef." It is characterized by its tender meat, vibrant meat color, and rich, flavorful texture.
