What is Kitauchi Farm Premium Beef from Ishigaki Island?
Commitment 1: The Gene for Deliciousness
Our fattening cattle have over 50% Tajima cattle lineage, with purebred Tajima cattle accounting for half of that.
We don't just rely on lineage; we improve meat quality at the genetic level.
We specifically breed bloodlines with a higher advantage for flavor within the Tajima strain (developing and producing our own breeding bulls).
In collaboration with Ryukyu University, Tohoku University, and Tokyo Women’s University, we conduct genetic testing and taste evaluations.
Commitment 2: Only Female Cattle
We only fatten female cattle with fine muscle fibers.
Female cattle have a lower fat melting point and contain more sweetness and amino acids in their meat compared to castrated males.
Commitment 3: Long Fattening Period
Our cattle are shipped at 36 months or older (the average for typical Japanese Black Wagyu is around 29 months).
