What is Kitauchi Farm Premium Beef from Ishigaki Island?

Commitment 1: The Gene for Deliciousness

  • Our fattening cattle have over 50% Tajima cattle lineage, with purebred Tajima cattle accounting for half of that.

  • We don't just rely on lineage; we improve meat quality at the genetic level.

  • We specifically breed bloodlines with a higher advantage for flavor within the Tajima strain (developing and producing our own breeding bulls).

  • In collaboration with Ryukyu University, Tohoku University, and Tokyo Women’s University, we conduct genetic testing and taste evaluations.

Commitment 2: Only Female Cattle

  • We only fatten female cattle with fine muscle fibers.

  • Female cattle have a lower fat melting point and contain more sweetness and amino acids in their meat compared to castrated males.

Commitment 3: Long Fattening Period

  • Our cattle are shipped at 36 months or older (the average for typical Japanese Black Wagyu is around 29 months).
