In the rich natural environment of Northern Shinshu, where pure snowmelt waters the plains, the Japanese Black cattle known as "Kitashinshu Miyuki Wagyu" are raised with care. This ultra-rare wagyu is bred in only a small part of the mountains behind Nozawa Onsen in Northern Shinshu, making its production extremely limited and seldom available on the market. It is often referred to as the "phantom" Japanese Black Wagyu. Due to the remote, mountainous location, producers spend up to seven hours a day clearing snow during the winter. Despite these challenges, they have developed and refined a homemade feed blend, leading to the production of exceptionally high-quality beef.
