Meat Sommelier. Wagyu Meister

"Jukuhou Wagyu" refers to Japanese Black cattle (Kuroge Washu) that have given birth and completed their role as breeding cows, known as keisan-gyu (cows that have borne calves). These cattle are re-fattened, resulting in beef with a balanced amount of fat and the deep, concentrated flavor unique to keisan-gyu. The taste of Jukuhou Wagyu evokes the rich and nostalgic flavors of traditional beef, reminiscent of the meat enjoyed in the past.
