Meat Sommelier. Wagyu Meister

The traditional Iwatecco Shorthorn Wagyu, also known as Nanbu Red Cow, is primarily raised in Iwate Prefecture. This rare Wagyu breed utilizes traditional summer mountain grazing and winter barn management methods, alongside the same techniques used for black Wagyu, to ensure product consistency. With lower fat content compared to marbled beef, its lean meat, rich in umami, is also ideal for aging beef.
