Welcome to Diamond J Wagyu
We are sixth-generation Nebraska cattle producers who first experienced the exceptional taste, tenderness and quality of Wagyu beef in 2015. While we initially planned to raise Wagyu to produce beef for our family, we were so impressed with the beef’s quality that we decided to open it to the public – and Diamond J Wagyu was born.
We created this website to make ordering beef more convenient for our customers, and we hope you’ll find the site easy-to-use. Here you can learn about Diamond J Wagyu, explore the health benefits of Wagyu beef and, most important, buy premium Wagyu beef!
About Us
Our History
I, Steve, am a fifth-generation livestock producer. My wife, Julie, and I have four sons. Our youngest son, Jordan, and his wife Hannah, represent the sixth generation to manage our family’s operation in Nebraska’s Dundy County.
We started raising Wagyu cattle in 2015 after eating Wagyu beef at a local veterinarian’s customer appreciation dinner. We were so impressed by the texture and quality of the beef that we decided to artificially inseminate (AI) 10 of our cows to Wagyu bulls. The goal was simply to produce enough beef for our family, but our family was so impressed with the quality of the beef that we decided to offer it to the public.
All of our Wagyu offspring are 50 percent Angus/50 percent Wagyu. This gives customers the very best from our foundation Angus herd, along with the superior qualities of the Wagyu.
When we first started offering Wagyu freezer beef, we marketed to people in our local area. We’ve recently moved product into the front range of Colorado and are excited to continue expanding our market.
While we are new to raising Wagyu, we are not new to the beef industry – our family has raised, grown and finished cattle for many generations. Producing high-quality beef is what we do every day of the year, whether it’s for our customers or our family. We are not part-time producers; we are a family-run operation.
Our family has enjoyed the taste and quality of Wagyu beef for several years. We are excited to offer you the opportunity to enjoy premium Wagyu beef in your home as well.
Our Commitment
We pride ourselves on our commitment to animal health and care. We utilize the latest trends and tools to enhance ethical beef production. Steve, Jordan and all of our employees are all Beef Quality Assurance (BQA) certified. We are proud of this certification and want to assure you that you can take pride in purchasing beef from Diamond J Wagyu, knowing that it was raised humanely and that we used common-sense husbandry techniques at all times. We work closely with our consulting veterinarian and nutritionist to help ensure proper nutrition and maintain the health of all our cattle.
Our Beef
We’re excited to offer the premium Wagyu freezer beef our family has enjoyed for years. All the cattle are raised on our family’s ranch in Nebraska. The beef is processed at Nebraska-based processing facilities. All beef is dry aged and vacuum packed to ensure a longer freezer life.
We offer individual cuts of beef, as well as beef bundles, so whether you’re cooking for one person or a large group, we have what you’re looking for. If you’re interested in purchasing beef as halves or quarters – with all beef cut to your exact specifications – please contact us to learn more.
If you’re ready to experience the superior taste, tenderness and quality of Wagyu beef, order yours today!
Why Wagyu
From fine dining consumers to weekend BBQ fans, Wagyu beef is becoming the red meat of choice. Wagyu beef is well known for its flavor and tenderness, which keeps consumers coming back.
Beyond its unique taste, Wagyu beef is also known for its health benefits. Due to the meat’s high marbling, it contains a high concentration of monounsaturated fat relative to saturated fat, which the American Heart Association says can lead to lower cholesterol levels, the prevention of coronary heart disease and weight loss. The ratio of monounsaturated fat to saturated fat is higher in Wagyu beef than in any other beef. Forty percent of the saturated fat contained in Wagyu beef is called stearic acid, which has been found to have minimal impact in raising cholesterol levels.
Wagyu beef is also higher in conjugated linoleic acid (CLA), a type of fatty acid; it contains the highest amount of CLA per gram of any foodstuff due to higher linoleic acid levels. Foods with naturally high CLA have fewer negative health benefits.
