Characteristics of Biei Kuro-ushi (Biei Black Cattle)
Biei Kuro-ushi is Japan’s first premium beef brand, created by crossbreeding Japanese Black cattle with Jersey cattle, and is not commonly available in standard markets.
The cattle are raised on the hills of Biei, at the base of the Daisetsuzan mountain range, in an area renowned for its rich natural surroundings, just like Biei Beef and Biei Wagyu.
The feed given to these cattle includes live yeast from sake lees, a by-product of sake production, which contributes to their health and vitality. Additionally, the cattle are fed safe, organically grown roughage and drink abundant spring water from the snowmelt of the Daisetsuzan mountains.
This careful upbringing results in beef with fine-grained, beautiful bright red meat. The flavor lingers richly on the palate, delivering a remarkable taste experience without the typical odor associated with beef, and with an exquisite sweetness.
