The Roots of Ashigara Beef
Ashigara Beef is a crossbreed of Japanese Black (Kuroge Washu) and Holstein cattle. The production area has a long history of interaction between people and cattle, being a prominent dairy farming region. The people involved in Ashigara Beef take pride in raising their cattle with care, deeply connected to the rich natural environment.
The Ashigara Plains
The Ashigara Plains are blessed with abundant water. Historically, this area was dominated by rice paddies and was known for its thriving rice cultivation. Today, agriculture still centers around rice production, along with crops like plums. Surrounded by lush mountains, cattle raised here grow healthily in harmony with nature. Only cattle that meet strict standards at designated farms and pass inspections are labeled as “Ashigara Beef” before being sold.
Commitment to Feed
1. Ashigara Tea
A Kanagawa Meisan 100 Selection product, Ashigara Tea offers a balance of umami and astringency. Feeding young Ashigara cattle with Ashigara Tea provides catechin benefits, reducing stress on internal organs, preventing allergies, and protecting against joint and bone disorders. This contributes to their development into glossy, healthy adult cattle.
2. Mineral-Rich Tanzawa Water System
Ashigara Beef is raised on spring water from the Tanzawa mountain system, rich in minerals that enhance the flavor and texture of the beef. The Tanzawa Mountain Range, known as “Kanagawa’s Roof,” includes peaks exceeding 1,000 meters, with Hirugatake as its highest point.
