Akita Nishiki Beef is Japanese Black cattle raised in Akita Prefecture. Named after "Tochinishiki" in the 1970s and trademarked in 1999, it features sweet fat and rich lean meat, raised in Akita's harsh environment. The cattle are fattened for around 25 months or more and graded A or B, with a meat quality grade of 3 or higher.
